About this wine
Vineyard and terroir
The Chardonnay grows at 450 m in vineyards at Pochi. Sunshine and good ventilation help the berries retain a favourable balance between acidity and sugar.
Grapes
Chardonnay.
Vinification
The grapes are pressed and destemmed, after which the must is cooled and fermented in steel tanks under temperature control. The second fermentation takes place in cuve close.
Ageing
After the second fermentation, the sparkling wine remains on its lees for 6–9 months at 14 °C. It is then separated from the lees, cooled and bottled, followed by three months in the cellar.
Tasting profile
Straw yellow with greenish reflections. The bouquet is delicate and lightly fruity, with hints of bread crust. The palate is fresh, lively, gently soft and balanced. Fine, uniform and persistent bubbles complement its fresh, fruity and elegant character.
Serving and pairing
Serve at 6–8 °C as an aperitif. Cellaring potential is 2–4 years.
