Piccini rewrites wine rules: Slim Chianti, new frontier of Tuscan wine

Slim Chianti was developed in response to demand for fresher, more immediate and lower-alcohol wines. Its 11% alcohol level also refers back to an earlier style of Chianti: the wines remembered from previous generations rarely exceeded 10–11%, with lightness placing greater emphasis on fruit. The project frames innovation as a process that can begin by reconsidering the past.
