About this wine
Vineyard and terroir
The grapes grow in the producer’s vineyards in the hills of Collio in northeastern Italy, on sandy marl soils.
Vinification
The fully ripe grapes are harvested by hand into small crates, then destemmed and gently pressed. The free-run must is separated from the solids and fermented with natural yeasts in 500–600 L wooden barrels for 15–20 days at a controlled temperature of 26–28 °C. After racking, a portion of Ribolla Gialla is added to the main blend.
Ageing
The wine ages in oak barrels for 12 months, followed by a further 12 months in bottle. It is bottled without sterile filtration.
