About this wine
Vineyard and terroir
The fruit comes from high-altitude vineyards in Apulia, planted on rocky soils at 350 m above sea level.
Vinification
The grapes are harvested by hand and machine in mid-August. Fermentation takes place in stainless-steel tanks for 9–10 days at a controlled temperature of 18 °C. Malolactic fermentation occurs in the spring following the harvest.
Ageing
The wine rests for 3–4 months in glass-lined cement vats.
