At Sapaio, Grappa Is Born from a Meeting of Minds

Podere Sapaio entered distillate production in 2016. The project followed an August meeting between Massimo Piccin and Priscilla Occhipinti, owner of the Nannoni distillery, whose technical expertise complemented Piccin’s emphasis on precision and close monitoring.

Carménère was chosen as the sole variety. The best unpressed, wine-soaked pomace was sent to the distillery, processed separately through an artisanal steam system and distilled on the same day as devatting. Production totalled 632 half-litre bottles, released in April 2017.
