Serafini & Vidotto cultivates Pinot Nero in several Montello plots and vinifies them separately. Roccolo is the principal cru, combining two harvest passes, strict manual selection, a proportion of lignified stems during maceration and new-barrel vinification. A younger interpretation is matured in stainless steel, while Marquise is made by vinifying Pinot Nero as a white wine for the traditional method. Across the range, tailored fermentations and vessels are used to privilege finesse and evolution over power.
