Pinot Nero sul Montello: trentacinque anni per arrivare a Roccolo Fleur
Francesco Serafini and Antonello Vidotto planted Pinot Nero in the early 1990s and spent more than three decades observing different sites, correcting mistakes and identifying appropriate exposures. They found the decisive conditions on Roccolo’s northern side: southeast-facing rows, shelter from the Prealps, moderating Piave breezes and early morning sunlight.
The Fleur vines are at least 20 years old, with deep roots, controlled yields and natural concentration. Production begins with two harvest passes and selection from the most favourably exposed sector. Cellar selection is followed by maceration with lignified stems dried in an oven through an estate-patented process that removes green components. The ‘200%’ technique combines fermentation in new wood with ageing in a second new vessel. Barrique Fleur barrels made from Tronçais oak are intended to retain fresh fruit and refine tannins. Fleur is made only when climate, vineyard and fruit reach the required level; approximately 600 numbered bottles are produced per selected vintage.
