Winter light and the maturity of wood

Between harvest and leaf fall, the vine continues work that is largely invisible from outside. Shoots mature into permanent wood, carbohydrates and mineral reserves move toward roots and trunks, and the plant prepares for dormancy. Winter light, declining temperatures and the completion of lignification influence the vine’s ability to withstand cold and restart evenly in spring.
