Tasting profile
Luminous straw yellow. The bouquet combines white peach, acacia flowers and sage with a pronounced saline note. The palate is savory, fresh and slender, with persistence recalling the sea and aromatic herbs. The long, saline finish brings back sage and citrus.
Serving and pairing
Serve at 10–12 °C in an aromatic-white-wine glass; decanting is unnecessary. Pair with shellfish, oysters, raw fish or creamed cod. Ageing potential is 4–6 years.
