Wine is understood as having its own life and evolution, often accomplishing much of its development by itself. Scientific methods, inherited practice and intuition all offer possible paths, but none provides complete certainty. The producer’s responsibility is defined as remaining attentive and caring rather than abandoning the wine to chance.
