Full Belly Files: Bolivia, Burger Week, Bettina & Barolo

Lorenzo Serafino is introduced as the latest generation of a Barolo family whose vineyard history reaches back to 1720. His mother Ivana manages much of the business, while his aunt Virna oversees winemaking. Lorenzo studied in Alba and works principally in production. He took full responsibility for the 2023 Langhe Nebbiolo, testing shorter maceration and lower fermentation temperatures to protect freshness, while continuing the estate’s established long wood ageing for Barolo. The contrast between Cannubi’s sandy, pale soils and Sarmassa’s compact clay is also explored despite the two sites being only about 300 m apart.
