Summer Black Truffle
Summer black truffle, or scorzone, finds suitable habitat in the estate’s sandy-clay soils and forests of holm oak, downy oak and turkey oak. It can reach a substantial size, has dark pyramidal surface warts and an intense aroma, and is harvested from late May to late August. The Osteria uses it seasonally, including in tagliatelle and truffle flan.
