About this wine
Vineyard and terroir
The grapes come from Zisola at Contrada Zisola in Noto, in the province of Siracusa. The vineyards lie at 130 m above sea level with a south-eastern exposure. Their medium-textured soils are calcareous and mineral. The vines are trained as head-pruned bush vines at a density of 5,550 plants per hectare. The vineyard is managed organically.

Vinification
The 2025 grapes were harvested by hand beginning on 26 August. Fermentation took place at a low temperature of 15 °C. The wine was bottled in March 2026 and scheduled for release in April 2026.
Technical data
The 2025 wine has 12.5% alcohol and total acidity of 5.50 g/L. Production amounted to 42,000 bottles, offered in 750 ml and 1.5 L formats.
Tasting profile
Aromatic and fresh, with floral and citrus notes. The palate is pleasantly dry and mineral.
Serving and pairing
Pair with light starters, seafood pasta or grilled vegetables.
Vintage notes
The 2025 growing season brought unusually heavy summer rainfall, including two separate events of 50 mm. Late-ripening varieties reached maturity slightly later than average, although Grillo initiated the estate harvest on 26 August. The conditions produced grapes with moderate potential alcohol and excellent acidity, favouring freshness and drinkability.
Label / history
Azisa is the word from which the name Zisola derives and means “beautiful,” expressing the character intended for this organic Grillo wine. The first vintage was 2014.
