The Return of PanKairos: the time of bread, the time of wine
After pausing PanKairos for one year, Celestino Gaspari revisited Offella, a historic sweet-bread recipe. He stripped it back toward the everyday idea of bread, then added a reduction of Kairos wine to bring the wine’s complexity and harmony into the filling.
The renewed PanKairos joins tradition with transformation, sweetness with structure and the fragrance of bread with wine. Its name combines pane and Kairos, framing the product as an invitation to savour time.
The new edition was developed with Vanna of Madamadorè, a pastry artisan representing the evolving culture of small, handcraft bakeries. The collaboration brings together two practices governed by patience, skill and care: kneading and winemaking.
Yeast serves as the connecting symbol. It extracts, transforms, defines and expresses, turning time into flavour and research into experience. PanKairos is conceived as a slowly enjoyed bread for sharing, optionally alongside a glass of Kairos. It was released as a limited edition at the winery and selected wine shops.
