Vinification
Pithos is fermented and matured in terracotta amphorae. The method involves long macerations, followed by months of rest in amphora with daily monitoring. Terracotta permits the wine to breathe while remaining aromatically neutral and contributing none of the flavours associated with wood.
Ageing
The wine matures in the same terracotta vessels used for vinification.
Label / history
Pithos was created in 2000 as an amphora-fermented and amphora-aged Cerasuolo di Vittoria. The project followed a journey to Kakheti, Georgia, undertaken to study the region’s amphora tradition. Its name pays homage to the founders’ Greek cultural inheritance: “pithos” is the jar in which the wine is vinified and matured.
Recognition
Pithos Rosso appeared in the top ten of Wine Enthusiast’s 2016 Enthusiast 100.
