Vinification
The grapes are harvested in early September. Primary fermentation takes place in airtight tanks at 17–18 °C to preserve their delicate aromas and the bouquet’s floral notes.

Label / history
“Duebollicine” means “two bubbles” in Italian, referring to both the wine’s bubbles and the two varieties in the traditional recipe. Cantina Sociale di Canelli was founded as an association of winemakers in 1933 in the heart of Piedmont. It now comprises more than 200 winemakers and oversees every stage of production across an area exceeding 2,000 km². Its members continue to invest in equipment and technology while maintaining the region’s winemaking traditions.
