The grapes are harvested throughout September. The wine is produced by the Charmat method, with secondary fermentation in large sealed tanks followed by bottling under pressure.

Cantina Sociale di Canelli is an association founded in 1933 in the heart of Piedmont. It brings together more than 200 winegrowers and oversees every stage of production across an area exceeding 2,000 km².
