Vineyard and terroir
The Fattoria Aldobrandesca vineyards lie near the village of Sovana in southern Tuscany.
Vinification
The wine is made by the traditional Tuscan passito method. Part of the harvest is vinified immediately; the remainder dries for one month in dry, well-ventilated rooms to concentrate its aromas and structure. Both batches are then gently pressed and undergo one week of maceration and fermentation in stainless-steel tanks at a controlled temperature below 20 °C. Fermentation is stopped at the desired sugar level by rapidly lowering the temperature.
Ageing
The wine is held at a low temperature until bottling.

Aleatico grown here combines a strong personality with softness.
