Vineyard and terroir
The vines average 20 years of age and grow in Sicilian soils rich in clay, gravel and minerals.
Vinification
The grapes are harvested by hand and gently pressed. Alcoholic fermentation takes place in stainless-steel tanks at a controlled temperature of 16 °C for 20–40 days.
Ageing
The wine rests for three months in stainless-steel tanks, followed by three months in bottle.
Tasting profile
Fresh and lively, with expressive acidity and a fragrant aroma.
