Vineyard and terroir
The fruit grows in Veneto in northeastern Italy, around Villa Novare near Verona. The vineyards benefit from a mild Mediterranean climate, clay soils and surrounding hills that provide favourable ripening conditions. The grapes develop a natural balance of sweetness and acidity.
Vinification
The grapes are harvested by hand during the first week of October, then destemmed and crushed. Fermentation takes place in stainless-steel tanks at 18–20 °C.
Ageing
The wine matures for 14 months in French oak barrels, half of which are new, followed by six months in bottle. The barrel ageing softens the wine and develops elegant, slightly sweet spice notes.
