Vineyard and terroir
The fruit comes from 100-year-old vines in the Serrone vineyard, planted on stony granite soils at 60–150 metres above sea level.
Grapes
Ansonica is also identified as Inzolia.
Vinification
The grapes are harvested by hand at optimal ripeness, then destemmed and pressed. After a one-hour maceration, fermentation takes place in new oak barrels at a controlled temperature of 20 °C. The wine is made at the Graetz winery in Fiesole.
Ageing
The wine ages on its fine lees for 12 months in new oak barrels.

Testamatta means “crazy head” in Italian. The name reflects Bibi Graetz’s restless, expressive character and creative approach to winemaking. The wine is produced in limited quantities.
