Vineyard and terroir
The Verdicchio comes from 5 ha of estate-owned vineyards at 180 metres above sea level. The vines have differing exposures and grow in sandy and clay soils. Cover crops are cultivated between the rows and ploughed into the soil every 3–4 years as a natural fertiliser. Green harvesting is practised.
Vinification
The grapes are harvested by hand at optimal ripeness, then crushed and gently pressed at the winery. The must ferments in stainless steel tanks with frequent pumping over.
Serving and pairing
Pair with pasta in creamy sauces, risotto, vegetables or fish dishes.
