Vineyard and terroir
The vineyards lie on the right bank of the Po River, in the far south of Lombardy. The moderate climate features marked temperature changes, dry winters and windy summers. The sedimentary soils contain limestone and clay in equal proportions.
Vinification
The grapes are harvested between late August and early September and transported promptly to the winery to limit mechanical damage, premature oxidation, microbial contamination and exposure to sunlight. After sorting, they are gently pressed to separate the juice from the skins. Fermentation takes place in temperature-controlled stainless-steel tanks, followed by secondary fermentation using the Charmat method in cuvées at 14–15 °C. The wine is then stabilized at −5 °C, filtered and bottled.
Ageing
After secondary fermentation, the wine rests on its lees for three months with regular bâtonnage.
