Vineyard and terroir
The grapes grow in Bottega’s vineyards on the right bank of the Po River in southern Lombardy. The area has a moderate climate marked by wide temperature swings, dry winters and windy summers. The soils are clay and limestone.
Vinification
The grapes are harvested by hand and destemmed, then macerated on their skins for 24 hours at approximately 5 °C. This temperature prevents fermentation from beginning and restricts the extraction of tannins and polyphenols that could cause bitterness and astringency. After gentle pressing, the juice ferments at a controlled 18 °C. The base wine undergoes a second fermentation by the Charmat-Martinotti method using selected yeasts.
Ageing
The wine ages on its lees before being filtered and bottled. It then rests for a further, unspecified period in the winery’s cellars before release, allowing its components to regain their balance.
Label / history
The bottle’s pink finish is applied directly to the glass using a metallization process.
