Vineyard and terroir
Pinot Nero is grown on the right bank of the Po River in southern Lombardy, among gentle hills with wide temperature variations and sedimentary soils containing marl. These conditions are particularly suited to the variety.
Glera and Chardonnay are grown in Veneto. The vineyards are well positioned and have well-drained limestone and clay soils of moderate fertility. Together with the mild climate, these conditions help the grapes retain good acidity and aromatic qualities.
Vinification
The grapes are harvested and quickly transported to the winery. They are carefully sorted to remove leaves, shoots and bark, as well as diseased or insufficiently ripe berries and bunches. The skins are then separated immediately from the juice by gentle pressing.
Pinot Nero undergoes secondary fermentation in a pressurised tank using the Charmat method, at 14–15 °C. This temperature preserves the richness and delicacy of the aromas, avoids changes in colour and prevents fermentation from slowing or stopping. Chardonnay and Glera undergo the same process. The wines are blended before bottling.
Ageing
After secondary fermentation, the Pinot Nero remains on its lees for an extended period. Chardonnay and Glera do not undergo this prolonged lees ageing.
