Vineyard and terroir
The grapes grow in well-exposed areas with a temperate climate and well-drained limestone and clay soils. Yields are kept moderate to preserve acidity and aromatic character.

All components of the blend come from the same vintage.
Vinification
Harvest usually takes place around mid-September. The grapes are transported promptly to the winery to limit mechanical damage, premature oxidation, microbial contamination and exposure to sunlight. They are destemmed and gently pressed, separating the skins from the must, which is clarified by settling.
Selected yeasts initiate the first fermentation in stainless-steel tanks. The second fermentation follows the Martinotti method in a pressurized stainless-steel autoclave, with pressure and temperature precisely controlled. Fermentation is maintained at 14 °C to preserve the grapes’ characteristic aromas. The carbon dioxide released naturally as the yeasts convert sugar into alcohol dissolves into the base wine. The finished sparkling wine is then cold-stabilized, filtered and bottled.
