Vineyard and terroir
The grapes grow in vineyards in the Treviso area of Veneto, which has a mild climate and mineral-rich alluvial clay soils.
Grapes
Selected Glera is blended with a small proportion of Pinot Nero.
Vinification
Harvest begins when the grapes have reached the desired ripeness, acidity and minerality. The varieties are vinified separately because they ripen at different times. Pinot Nero is harvested in late August, while Glera is usually picked in mid-September.
Both varieties are destemmed and gently pressed. The clarified Glera must ferments in stainless-steel tanks with selected yeasts. Pinot Nero undergoes 12–16 hours of pre-fermentation maceration; the juice is then separated from the skins and fermented at a controlled temperature.
After blending, the wines undergo secondary fermentation by the Martinotti method at 15–16 °C for an average of two months. The finished wine is cold-stabilized, filtered and bottled.
