Vinification
The alcohol is removed by distillation in a vacuum evaporator. The most volatile aromatic compounds are first evaporated at low temperature and collected. The temperature is then gradually raised to evaporate and remove the ethanol, after which the captured aromas are returned to the wine to preserve the original bouquet and flavour.
