Vineyard and terroir
The fruit comes from the company’s vineyards in Salento.
Vinification
The grapes are harvested in the first half of September, pressed at the winery and macerated before fermentation in stainless-steel tanks at 25–27 °C.
Ageing
The wine rests in old barrels for three months.
Serving and pairing
Pair with grilled red meat, roasts or pasta.
