Vineyard and terroir
Once fully ripe, the grapes are left on the vine a little longer and harvested only when slightly overripe.
Vinification
The grapes are harvested slightly overripe. At the winery they macerate at a controlled temperature for 15–20 days. Alcoholic and malolactic fermentation both take place in barrels at around 25 °C.
Serving and pairing
Pairs with meat dishes and cheeses, and can also be enjoyed between courses.
