Vineyard and terroir
The grapes grow on Sicily's sun-drenched volcanic soils.
Vinification
The grapes are picked by hand into crates holding 2–3 kg and kept in well-ventilated rooms for 10 days. Once partly dried, they are gently exposed to smoke. The grapes are then crushed and macerated, and fermentation lasts 12 days at a controlled 26–28 °C.
Ageing
About 30% of the wine is aged in French and American oak barrels.
Tasting profile
The smoking of the partly dried grapes gives savory, smoky notes.
Vintage notes
The 2024 vintage will keep well until 2031.
