Vineyard and terroir
The grapes are grown in Puglia in vineyards cultivated according to organic winegrowing principles.
Vinification
The grapes remain on the vine to dry for 15–20 days, losing 50% of their weight through evaporation and concentrating their sugars. They are then harvested by hand, sorted and gently pressed. Temperature-controlled fermentation takes place in stainless-steel tanks, with extended skin contact, following the appassimento method.
Ageing
The wine spends 30 days in oak barrels, where it completes malolactic fermentation.
Tasting profile
The drying process gives the wine ripe and dried-fruit notes, including plum and raisin. Its time in oak adds spice and vanilla to the aroma and palate.
Serving and pairing
Pair with red or white meats, game, and mature hard cheeses.

The name “Gran Passione” refers to the passion and dedication invested in the work and to respect for the traditions of the land.
