Questo vino
Vineyard and terroir
The grapes come from Italy, where the growing environment is shaped by sunshine and the protection of the Alps and the sea. Slow ripening, mineral-rich soils and good sun exposure contribute freshness and vibrancy.
Grapes
White grapes.
Vinification
Free-run juice obtained by gentle pressing is transferred to stainless-steel tanks for cold static decantation. Selected yeasts conduct the first fermentation at a constant 18°C over 8–10 days. After tasting, the winemaking team selects the base wines destined for sparkling-wine production.
The selected wine is filtered into stainless-steel tanks, where sucrose and selected yeasts initiate the second fermentation by the Martinotti–Charmat method at 14–15°C. After the required pressure, alcohol and sugar levels have been reached, the wine is refrigerated and cold-stabilized at −2 to −3°C, then filtered, checked and bottled.
