Vineyard and terroir
Italian white grapes. The wine page connects its origin with the provinces of Belluno, Padua, Treviso, Venice, Vicenza, and Verona. A mild, sunny microclimate shaped by the Alps and the sea encourages slow, even ripening. Vinification
Grapes are selected for origin and quality. Free-run must obtained by gentle pressing is transferred to stainless-steel tanks for cold static settling. Fermentation with selected yeasts proceeds at a constant 18°C for 8–10 days. The base wines are tasted and selected for sparkling-wine production, then filtered before sucrose and selected yeasts are added. Secondary fermentation takes place in stainless-steel autoclaves by the Martinotti–Charmat method at 14–15°C. On reaching the required pressure, alcohol, and sugar levels, the wine is chilled, cold-stabilized at −2 to −3°C, filtered, checked, and bottled.
Technical data
Vino Spumante Extra Dry. Alcohol: 11% vol., with a possible vintage-dependent variation of ±0.5% vol. Available format: 750 ml.
Tasting profile
Pale straw yellow with a fine, persistent perlage. The delicate, lightly aromatic bouquet offers pear and green-apple fruit followed by acacia and wisteria flowers. Fresh and subtle on the palate, with balanced acidity, body, and savoriness, harmonious structure, and a long, persistent finish. The overall style is dry and crisp.
Serving and pairing
Serve at 8–10°C. Suitable as an aperitif and with appetizers, delicate first courses, prosciutto crudo, or fish main courses.
