Vinification
The wine is distinguished by its fermentation in specially shaped vats. The original stone versions of these traditional vessels have been used in Puglia since the earliest days of winemaking, and archaeological finds confirm their presence in the Salento area. Their low, wide, fully open shape gave the must more contact with the grape skins than traditional methods allow and helped oxygen dissolve more effectively during fermentation.
Today the must is vinified in modern stainless-steel vats designed to reproduce the shape and features of the originals. Thorough extraction from the skins and improved oxygen dissolution produce riper tannins that are less aggressive yet persistent.
Ageing
No oak influence.
Tasting profile
Deep dark-purple colour, rich aroma and full-bodied flavour. The wine has excellent structure, concentration and a very long finish. The tannins are ripe, less aggressive and persistent.
Serving and pairing
Pairs especially well with lamb or grilled meat.
