Vineyard and terroir
The Vermentino is grown in Puglia, in a warm, moderate climate where rainfall is significant throughout the year.
Vinification
The fermentation method is inspired by the traditional stone vessels used in Puglia since the earliest days of local winemaking, whose presence in the Salento area is confirmed by archaeological finds. Their low, wide, fully open shape gave the must more contact with the skins than conventional winemaking and helped more oxygen dissolve during fermentation. Today the must is vinified in modern stainless-steel vessels designed to reproduce the shape and characteristics of the originals.
The grapes are gently pressed to preserve their best qualities. The must ferments for 7 to 12 days in stainless-steel tanks at a controlled 14–16 °C, which helps the bright fruit notes develop.
Ageing
After fermentation the wine stays on its lees in the same stainless-steel tanks at 10–12 °C, gaining depth and complexity until bottling.

Fresh and fruity, light yet full-flavoured, with bright fruit notes.
