Vineyard and terroir
The grapes are grown in Puglia. The vineyards have a warm, temperate climate with significant rainfall throughout the year. In summer, African winds bring a rapid, noticeable rise in daytime temperatures, creating a marked difference between day and night temperatures.
Vinification
Harvest takes place in the first ten days of September. The grapes are sorted, destemmed and gently pressed, then macerated for 8–10 days at a controlled temperature. During fermentation the must is stirred by hand. Malolactic fermentation takes place in stainless steel tanks.
Ageing
The wine matures for 6–8 months in French and American oak barrels.
