Vineyard and terroir
The fruit comes from vineyards in Salento.
Vinification
The grapes are harvested during the first ten days of September and carefully sorted. Vinification uses the submerged-cap method for 12–15 days at temperatures of up to 25 °C.
Ageing
The wine matures in steel vats and then in bottle.
