Vineyard and terroir
The Negroamaro fruit is grown around Copertino in Salento, Apulia. The area has a warm climate with moderate temperatures and substantial rainfall throughout the year. In summer, hot winds from Africa can cause temperatures to rise rapidly.
Vinification
The grapes are harvested by hand in the second and third weeks of September, then sorted, destemmed and gently pressed. Pre-fermentation maceration at 3–4 °C extracts the variety’s aromas. Fermentation and maceration take place in temperature-controlled stainless-steel tanks at 25–27 °C for 15–20 days. Malolactic fermentation completes the vinification.
Ageing
Following pressing, the wine matures in stainless-steel tanks for 4–6 months.
