Vineyard and terroir
The grapes are grown in the Rai area of the province of Treviso, near the historic town of San Polo di Piave. The vineyards lie at 30 m above sea level on clay-sandy soils containing gravel. Planting density is 2,888 vines/ha, with yields of approximately 12 t/ha.
Vinification
The ripe grapes are harvested by hand in September and gently pressed. Alcoholic fermentation takes place in steel tanks. Yeast and sugar are then added to the base wine, initiating a second fermentation under pressure in sealed steel tanks according to the Charmat method. Malolactic fermentation is avoided. The wine is stabilized and microfiltered before bottling. At 20 °C, it has a bottle pressure of at least 3 bar.
Ageing
The wine is not aged. After bottling, it rests in the cellar for 30 days before release.
Label / history
The word “Rajo” was used in ancient times to mean Paradise. The wine received a silver medal at Mondus Vini 2008, a bronze medal at the 2008 Decanter World Wine Awards, the Trophee Prestige at Cittadelles di Vin 2008, a silver medal at Selezione del Sindaco, a gold medal at the 2008 National Vini di Pramaggiore Exhibition, and a diploma with distinction at the 6th Italian Oenological Competition for Sparkling Wines.
