Sùere's structure, acidity, minerality and fruit-and-floral profile are matched with tortelli filled with chicken cacciatore. A reduced tomato and white-wine cooking sauce can bridge the dish and wine, while thyme or rosemary can reinforce their aromatic relationship. A serving temperature of 10–12°C is recommended.
