Grapes: 100% Sangiovese.
Vinification: alcoholic fermentation with 25–30 days of skin maceration at controlled temperature. Spontaneous malolactic fermentation takes place in truncated-conical Slavonian oak vats.
Aging: 30–36 months in 10–25 hl Slavonian oak barrels, followed by at least 6 months in bottle.
Release: January of the fifth year after harvest.
Characteristics: ruby-red colour tending toward garnet. Elegant and persistent aromas of red fruit, particularly cherry, with vanilla notes. Structured, harmonious and powerful on the palate, with firm tannins and a very long finish.
Food pairings: roast red meats, game and very mature cheeses.
Bottle formats: 0.75 L, 1.5 L and 3 L.
