Vineyard and terroir
The Perricone grapes are organically grown.
Grapes
Perricone is also known as Pignatello. For decades, it was the leading red grape variety in western Sicily.
Vinification
The grapes are harvested by hand and carefully sorted. After destemming, they macerate and ferment in temperature-controlled stainless-steel tanks at approximately 25 °C for 15–20 days. Malolactic fermentation follows.
Ageing
The wine matures for six months in stainless-steel tanks, then rests for a further three to six months in the winery’s cellars after bottling.
Tasting profile
Fresh and lively, with Perricone’s prickly character softened through vinification while retaining its distinctive personality.
