Vineyard and terroir
The grapes picked in October dry naturally on the vine under the Sicilian sun.
Vinification
The grapes are harvested by hand in two stages: mid-September and the first ten days of October. The September pickings are kept for 20 days at a controlled 25 °C in well-ventilated drying rooms known as "fruttai". In this time the berries lose around 40% of their weight, and the drying significantly enriches their aromatic profile. The October grapes dry on the vine.
All the grapes then go into a steel tank for low-temperature maceration and fermentation, which takes up to a month. Only after malolactic fermentation is complete is the juice separated from skins and pulp by pressing.
Ageing
The wine ages for 4 years in tonneaux of French and American oak, handcrafted by a Sicilian master cooper. After bottling it rests at least another 12 months in the winery's cellars.
Label / history
Made from Caruso & Minini's finest grapes in tribute to Nino, the father of Stefano Caruso, and to the values he passed on: a love of the vine, culture and the land. The winemakers worked closely with agronomists on the project, selecting the four varieties as the most representative. The label portrays Nino with his usual red suspenders and walking stick, painted by his grandson Antonio Caruso, an artist and art historian from Venice. The back label reads: "To a special man, father, grandfather and friend."
