Vineyard and terroir
The Chardonnay comes from Castellina in Chianti, Siena, at 350–400 metres above sea level. The soils are limestone and clay. Vines are trained to single-arched-cane Guyot at a density of 2,500 plants per hectare, with a stated yield of 40 quintals per hectare. Harvest takes place at the end of September.
Grapes
100% Chardonnay. The first vintage was 1988.
Vinification
Vinification takes place in French oak barriques. Malolactic fermentation is described as partial in the wine-page data and complete in the technical sheet.
Ageing
Ageing combines French oak barriques with an extended period in bottle. Exact durations are not given.
Technical data
Toscana IGT. Available in 750 ml bottles.
Tasting profile
A structured, mineral and complex white conceived in a Burgundian style. The technical sheet describes a golden-yellow colour with pale highlights and aromas of fig, pear, toast, almond, hay and white peach. The palate is fresh, opening on green apple with a touch of orange zest. The wine page instead describes a straw-yellow colour, white-peach and mineral aromas, and a fresh, full-flavoured, harmonious palate.
Serving and pairing
Suitable for oven-baked sea fish and shellfish, cold white meats, and blue or marbled cheeses. Its structure and barrel vinification allow it to accompany strongly flavoured dishes.
