Vineyard and terroir
The vineyards are at Castellina in Chianti, 350–400 m above sea level, on limestone and clay soils. The 2024 technical sheet gives a planting density of 3,000 plants per hectare. The vines are trained to single-arched-cane Guyot.
Grapes
Latest published composition: 90% Sangiovese, 5% Malvasia Nera and 5% Canaiolo.
Vinification
Governo di Castellare employs the traditional Tuscan Governo technique: after the first fermentation, a small quantity of dried grapes is added. Fermentation takes place in temperature-controlled stainless steel, and malolactic fermentation is completed.
Ageing
The 2024 technical sheet specifies four months in concrete followed by two months in bottle.

The 2024 technical sheet gives a yield of 70 q/ha and a 0.75 L format.
Tasting profile
Light ruby red, with a floral bouquet. The palate is smooth, lively and easy to drink.
Serving and pairing
Ready in spring and suitable for serving chilled in summer. Pair with pasta and rice dishes, white meat, fish stews, Tuscan soups and fresh pasta.
Label / history
First produced in 1986, Governo di Castellare is the estate’s approachable base red. Its identity derives from the traditional Tuscan Governo method.
