Vineyard and terroir
The Sauvignon Blanc is grown at Castellina in Chianti, Siena, at 350–400 metres above sea level. The soil is limestone and clay, fine-grained and rich in skeletal material. The vines are trained to single-arched-cane Guyot at 2,500 plants per hectare. Yield is 40 quintals per hectare, and harvest takes place at the end of September.
Grapes
100% Sauvignon Blanc. The first vintage was 1988.
Vinification
The wine is vinified in new barriques, with partial malolactic fermentation.
Ageing
Ageing lasts 12 months in French oak barriques, followed by 10 months in bottle.
Technical data
Toscana IGT. Available in 750 ml bottles.
Tasting profile
Straw yellow, with a complex nose combining white peach, fruit and mineral nuances. The palate is fresh, full-flavoured and harmonious. It is conceived as a richly aromatic, complex white with sustained texture and the capacity to age.
Serving and pairing
Pairs with risotto and other rice dishes, shellfish, and white meats.
Vintage notes
The 2024 growing season began with cool, rainy weather that replenished soil moisture. A hot yet balanced summer followed, moderated by cool nights and marked day–night temperature variation. Harvest began early; the grapes were healthy and production was satisfactory, although slightly below the most abundant years.
Label / history
Presented as the white counterpart to Canonico, its name evokes the score of a substantial musical composition.
