Vineyard and terroir
The grapes are grown in the commune of Castellina in Chianti, on limestone soils. The vines are 25–30 years old on average.
Grapes
The 2007 wine combines 35% I Sodi di San Niccolo, 33% Poggio ai Merli and 32% Coniale.
Vinification
The grapes were harvested by hand in the second half of October. Fermentation lasted 25 days in small steel tanks at a controlled temperature of 28 °C.
Ageing
The wine matured for 24 months in 225-litre French oak barriques, two-thirds of which were new.
Label / history
Created to celebrate the winery’s 30th harvest since its foundation, the wine has a label depicting 30 birds that were saved from extinction and now live on the estate.
