Vinification

For the 2021 vintage, the grapes were hand-picked into 15 kg crates during the coolest hours of the day. Gentle pressing produced a clear must with a light extraction of anthocyanins. A 12-hour cold clarification followed. Fermentation took place at a constant, controlled temperature in stainless-steel tanks, with part of the must fermented in wood. The different cuvées were assembled in March, followed by tirage and secondary fermentation in bottle.

Ageing

A prolonged period on the lees preceded riddling and disgorgement. Several additional months of bottle ageing before release brought greater harmony and organoleptic balance.

Tasting profile

The 2021 has a bright, pale-pink colour and an elegant, persistent stream of bubbles. Floral and fruit aromas recall red berries and pink grapefruit. Delicate tertiary tones emerge toward the finish, combining roasted nuances with pastry and bread crust from extended lees contact. The palate is notably fresh, with fine effervescence, savoury definition and a long finish.

Vintage notes

Substantial rainfall in the opening months of 2021 built good water reserves. Temperatures fell sharply in the second half of April, then recovered in May. Dry, lightly windy conditions supported even fruit set, while favourable conditions in May and June kept the vines healthy and encouraged berry development. The harvest period was completely dry, yielding sound, flavourful grapes.

Label / history

The wine is named for Leonia Frescobaldi, who planted French varieties at Pomino, worked with a gravity-fed cellar and earned a gold medal at the 1878 Paris Exposition.
