Vineyard and terroir
The Vermentino is grown in Tuscany on land that formed part of a seabed 4 million years ago. Ancient fossils can still be found between the vine rows.
Vinification
Ripe grapes are harvested by hand, crushed and gently pressed using semi-reductive processing, with little or no exposure to oxygen. The must undergoes cold static settling for 24 hours before fermentation at a controlled 16–18 °C.
Ageing
The wine matures in temperature-controlled tanks until January or February of the year following the harvest.
Tasting profile
Well balanced and soft, with notes of citrus fruit, minerals and flowers.
Label / history
The label depicts the Vitruvian Man in tribute to Leonardo da Vinci, after whom Cantina Leonardo da Vinci is named. The cooperative was founded in 1961 by thirty small wineries that combined their winemaking interests and shared the cost of constructing a large cellar. Its vineyards then covered 70 hectares and have since expanded to approximately 750 hectares.
In the late 20th century, Cantina Leonardo da Vinci acquired the historic estates Fattoria Montalbano and Cantina di Montalcino. The “DalleVigne” organization was established in 2002 to market its products and distribute them to the HoReCa sector in more than 50 countries. “DalleVigne” is now part of Caviro.
Caviro was founded in 1966 as a cooperative of independent wine producers. It now brings together 34 independent wine estates and more than 13,000 vineyards across Italy. Its average annual production is approximately 500 million litres, of which more than 200 million litres are exported.
